      <image:caption>This winter apple spiced loaf is perfect for a delicious breakfast along with some fruit and yoghurt, for a sweet snack to go with your cup of tea or for a scrumptious dessert which will impress all of your guests this Christmas! This loaf may look very simple yet, it is filled with surprises by combining the most amazing aromatic and fruity flavors, moist, smooth and crunchy textures. Take it to the next levels by topping it up with your favorite ingredients (homemade chocolate glaze, in-season fruit jam, maple syrup, nut butters, coconut flakes…) Ingredients 1/4 cup coconut oil, melted 1tbsp maple syrup 1/3 cup peanut butter 1tsp vanilla essence 1tsp grated ginger 1/3 cup oat milk 1/2 cup apple sauce (I made my own, find recipe here) 2 cups of flour (1 all-purpose: 1 wholemeal) 2tsp baking powder 1tsp cinnamon 1tsp mixed spice pinch salt 2 medium golden red apples, chopped in small squares handful chopped walnuts Method Preheat the oven to 180ºC and grease a loaf tin with some coconut oil In a bowl, add the coconut oil, maple syrup, peanut butter and vanilla essence, mix well until all ingredients are combined Add the applesauce into the mixture and stir together. Set aside In a large mixing bowl, sift the flours, baking powder, salt and spices. Add the applesauce mixture, and begin mixing all ingredients while pouring the milk Once all ingredients are combined, stir in the apples and walnuts. Pour the batter into the greased tin and bake for 45 minutes at 170ºC. Half way through, cover the loaf with some foil to avoid from over browning the top Let it cool down completely before removing from the tin and enjoy with your favorite seasonal toppings!</image:caption>

Take it to the next levels by topping it up with your favorite ingredients (homemade chocolate glaze, in-season fruit jam, maple syrup, nut butters, coconut flakes…) Ingredients 1/4 cup coconut oil, melted 1tbsp maple syrup 1/3 cup peanut butter 1tsp vanilla essence 1tsp grated ginger 1/3 cup oat milk 1/2 cup apple sauce (I made my own, find recipe here) 2 cups of flour (1 all-purpose: 1 wholemeal) 2tsp baking powder 1tsp cinnamon 1tsp mixed spice pinch salt 2 medium golden red apples, chopped in small squares handful chopped walnuts Method Preheat the oven to 180ºC and grease a loaf tin with some coconut oil In a bowl, add the coconut oil, maple syrup, peanut butter and vanilla essence, mix well until all ingredients are combined Add the applesauce into the mixture and stir together. Set aside In a large mixing bowl, sift the flours, baking powder, salt and spices. Add the applesauce mixture, and begin mixing all ingredients while pouring the milk Once all ingredients are combined, stir in the apples and walnuts. Pour the batter into the greased tin and bake for 45 minutes at 170ºC. Half way through, cover the loaf with some foil to avoid from over browning the top Let it cool down completely before removing from the tin and enjoy with your favorite seasonal toppings!</image:caption>

      <image:caption>This hearty stew is super simple and easy to make, delicious and perfect for lunch or dinner during the cold winter months. This recipe makes 4-5 servings, this way you can store any leftovers inside your fridge and use them up during the week - great way to nourish your body with home cooked meals and save time! This recipe is completely plant-based which means it’s vegan friendly, rich in fibre and contains all essential macronutrients. I decided to use mushrooms as meat alternatives offering a very unique flavor and texture, the overall consistency and richness of the dish was just perfect. Let me know if you give this recipe a go this winter and don’t forget to tag me in all of your creations! Ingredients 1 cup of black lentils, rinsed 2 handfuls dried mushrooms 2tbsp olive oil 1 yellow onion, chopped 3 garlic cloves, mined 1 green pepper, chopped 1 can chopped tomatoes 3 carrots, cut into thick slices 3-4 sundried tomatoes, chopped 1tsp tomato paste 1tbsp grated ginger 1tsp cumin 1tbsp smoked paprika 1tsp dried oregano 3 cups of water salt and pepper Method Soak the lentils for 1 hour (this is completely down to personal preference since compared to other legumes, lentils don’t necessarily need to be soaked) and rinse well Rehydrate the mushrooms by placing them in a bowl and covering them with hot water for about 20-30 minutes Heat up the olive oil in a large saucepan and add the onion, green pepper and minced garlic, cook for 6 minutes at medium heat until the onion turn translucent Add the spices, sun-dried tomato, tomato paste and grated ginger and cook for an extra 3 minutes. Add the rinsed lentils and combine well with all the ingredients. Then, add the mushrooms (including the water used for rehydrating), chopped tomatoes and carrots slices. After all ingredients have been properly combined, add the water, salt and pepper and bring to a boil. Cover it up and let it simmer at medium heat for 4o minutes, until lentils and carrots are tender. Enjoy on its own with a drizzle of tahini or served with a side of rice.</image:caption>

This nourishing version is made out of mostly plant-based ingredients (at exception of the melted cheese on top, of course!) and warm Mediterranean spices which will transport you to the beautiful Italian countryside. Pair it up with a nice glass of red wine and enjoy this delightful Italian-inspired experience. Ingredients 1/2 big (or 1 medium) sweet potato 1 courgette 1 aubergine 1 can chopped tomatoes 1 handful baby spinach 4 garlic cloves 1/4 grated tetilla cheese 2 tbsp olive oil 5 fresh mint leaves 2 tsp turmeric 1 tsp smoked paprika 1/2 tsp chilli powder Salt and pepper Optional: chopped walnuts for garnish Method Preheat the oven to 180°C Peel the sweet potato and cut into thin slices of ~5mm, place in an oven tray for 15 minutes Slice the courgette and aubergine and place them in the baking tray with the garlic cloves and the sweet potato for an extra 15 to 20 minutes In the meantime, chop the mint leaves and add into a small bowl together with the chopped tomatoes and spices Grate the cheese and reserve Once the vegetables are cooked and have soften, remove from the oven Add the garlic cloves into the tomatoes mixture In a baking dish, place one layer of sweet potato slices, then place a layer of courgettes and aubergines and cover with half of the tomato sauce and grated cheese.       <image:caption>After qualifying as a nutritionist from the University of Nottingham, Andrea subsequently graduated with a Distinction from a Master of Sciences (MSc) in Eating Disorders from University College London. Andrea has completed further training in Intuitive Eating, Body Image work for nutrition professionals, Cognitive Behavioral Therapy, and Acceptance and Commitment therapy.  She has a passion for learning about the complex interaction between food, body and the mind and is currently in a journey to becoming a psychologist. As a nutrition counsellor and human with lived experience of disordered eating, Andrea understands the toll that living preoccupied by food, the feelings of guilt and shame that follow and the relentless noise screaming it is never enough can take in someone’s life. Having navigated her own journey to healing her relationship with food, Andrea grasps the challenges that come with feeling consumed by food obsession and body hatred.</image:caption>
